The lemon sauce is fresh and tangy and somehow I always end up eating too much :-).<\/p>\n\n\n\n<p>It takes a bit to prepare and is not the sort of thing you would want to cook each night of the week. <\/p>\n\n\n\n<p>However, it is worth the effort.<\/p>\n\n\n\n<p>I usually make it once in a while as a special meal for my husband. And it always turns out great. <\/p>\n\n\n\n<p>Fortunate Lemon Chicken <\/p>\n\n\n\n<p>4 whole boneless chicken breasts, skin off<\/p>\n\n\n\n<p>\u00bd cup cornstarch (corn flour)<\/p>\n\n\n\n<p>3 tbls water<\/p>\n\n\n\n<p>4 egg yolks &#8211; gently beaten<\/p>\n\n\n\n<p>salt, pepper &#8211;  to taste<\/p>\n\n\n\n<p>shallots &#8211; chopped<\/p>\n\n\n\n<p>Lemon Sauce<\/p>\n\n\n\n<p>\u00bd cup lemon juice<\/p>\n\n\n\n<p>2 tsp powdered chicken stock<\/p>\n\n\n\n<p>2 tbls cornstarch (corn flour)<\/p>\n\n\n\n<p>2 tbls honey<\/p>\n\n\n\n<p>2\u00bd tbls brown sugar<\/p>\n\n\n\n<p>1 tsp grated ginger<\/p>\n\n\n\n<p>1\u00be cups water<\/p>\n\n\n\n<p>For the sauce, combine all the ingredients in a saucepan and stir over a low heat until it boils and then thickens.<\/p>\n\n\n\n<p>Cut the chicken breast fillets into 3-4 pieces. Lay flat and pound slightly with a mallet or other heavy object. <\/p>\n\n\n\n<p>Place cornstarch in a bowl and slowly add the water, and then add the slightly beaten egg yolks. Next add salt and pepper to your liking.<\/p>\n\n\n\n<p>Dip the chicken pieces into this batter and ensure you drain well.<\/p>\n\n\n\n<p>Place a couple pieces of the battered chicken at a time, into deep hot oil and fry until lightly browned.<\/p>\n\n\n\n<p>Drain on absorbent paper.<\/p>\n\n\n\n<p>Slice chicken further if required.<\/p>\n\n\n\n<p>Arrange on plates of freshly cooked white rice. Sprinkle with shallots and spoon over hot lemon sauce.<\/p>\n\n\n\n<p>Enjoy!<\/p>\n\n\n\n<p>Then end the meal with a home-made Chinese Fortune Cookie. <\/p>\n\n\n\n<p>Insert a message in each cookie to suit the mood of the meal.
